Kenyan Cuisine

Kenyan cuisine has a rich history that has been shaped by a diverse range of cultural influences. The country has been home to various ethnic groups for centuries, and each group has contributed to the development of the country's unique culinary traditions.


The traditional diet of the indigenous people of Kenya, known as the Bantu people, was primarily based on staples such as corn, beans, and millet. These grains were often ground into flour and used to make porridge or bread. Additionally, the Bantu people relied heavily on wild game and fish for protein, as well as fruits and vegetables that were grown locally.


With the arrival of Persian traders in the 18th century, Kenyan cuisine began to incorporate new flavors and ingredients, such as aromatic spices and coconut milk. Additionally, the Asian community that arrived in Kenya during the British colonial period brought with them a wide range of aromatic spices too and cooking techniques, which have since become a staple of Kenyan cuisine.


Thus, the birth of the Swahili cuisine was born. Swahili cuisine is influenced by East African Bantu Cultures, Persian, Asian and Portuguese foods and is spicy sweet and not spicy hot. Rice is the staple food.  Dishes are often cooked in coconut milk and served with meat, beans, or vegetable stews. 

Meals incorporate locally available vegetables and fruits and spices. Fish is also central to the diet. Chicken and goat meat are popular for holiday meals. Sweet tea with milk (Chai) or Strong Coffee (Kahawa) is served several times a day.


Today, Kenyan cuisine is a melting pot of different cultures and influences. The country is known for its delicious stews and curries, as well as its grilled meats and seafood. Kenyan cuisine is also known for its use of spices and herbs, such as cumin, turmeric, and coriander. Additionally, traditional dishes such as ugali, a cornmeal porridge, and chapati, a type of flatbread, are still widely consumed in Kenya.
